Imagine burning hot sand in your armour and not being able take it off or get it out. That would be terrifying.

Boiling water or oil were not really used because heating them would use fuel that couldn't be replaced if you were under seige. Most commonly, lime would be poured through murder holes because it would burn the eyes and lungs of attackers, and there would usually be a plentiful supply of it as it was used to make mortar for building and repairing the castle. 
Sharp turns were used not to disorientate attackers, but to severely restrict their ability to use a battering ram against doors - you can't use a 10 foot ram in a 4 foot space.
The sloped section at the bottom of castle walls served 2 purposes - to thicken the wall at its most vulnerable point, and so that rocks dropped from above would strike it and bounce off toward attackers. A dropped rock either hits someone or it misses completely, but a rock travelling along the ground can injure or scatter a whole bunch of attackers.

Also, most castle owners were friends of or related to other castle owners, so a castle would send a message by runner, pigeon, smoke signal, signal fire,.... to other castles who would then come to their aid.
