The Zerodha - Groww orderbook example is incorrect because these are brokers not exchanges. Rather in reality both Zerodha and Groww would show the same orderbook if a person is looking at the NSE-TATA stock. As the underlying exchange is NSE. Similar with BSE.

Your example is correct for crypto exchanges. As they have different orderbooks as they are different exchange. 
Example: Coinbase , Binance, kucoin etc

A better headline for this video would be 'system design for indian exchange and order matching'. This is how NSE, BSE or MCX works. It has nothing to do with zerodha or any broker. From name, it appears like how to use zerodha API for trading algo, which is not the case
