Usually when I have some pears my go-to recipe is a vegan pear galette, but wanted to try something different and your recipe came at the perfect time. Miyoko, you are incredible; I really love watching your videos and learning from you and I think its amazing you have created this beautiful sanctuary. I have a request for 2 summer/fall recipes, please. Vegan spinach & ricotta rolls - its like a sausage roll, but no meat, just the spinach and ricotta in flaky pastry. Also a vegan quiche too. For the quiche, a popular flavour combo here is spinach, onion, and cheese quiche, but any flavour combo would be wonderful. I am curious to see if it could be made with pumpkin seed egg with aquafaba or something else, just no soy/tofu if possible. They are very popular for entertaining with a lovely salad and fruit chutney, and I have never been able to come up with a good recipe. Have a beautiful weekend, Miyoko ππ»
