Fun fact: in vim you can select some lines and press gq to wrap it. I tend to just write out the text without worrying much about the formatting beyond splitting it into paragraphs, then when I'm done I use this vim motion to format the text for me. The line width that is used is specified in the textwidth or tw option, so if you want a max width of 78 then you do :set tw=78
