Every "state of the art" wireless car start feature will eventually be cracked. In my city it's already a very common way to steal cars.

The Toyota remote start thing is why I'll probably only use aftermarket systems to remotely start my car that aren't internet connected. Sure, I might have to deal with an extra key fob, but at least I'm not paying a subscription fee to use the darn feature.

My friend has smart lights throughout. Last year he text me to say they have been sitting in darkness for hours cos his Internet was down.

You forgot that Ring door bells act as a access point for others to use your Internet connection. I think in Europe it was blocked but its there in the t&c

I work in tech, so I am the go to person for people to ask "what should I get"  when they are getting a new device. I always tell people that if you device does not need to be connected don't get a connected device. And if you have to get a connected device go for an established company. I know so many people with devices that are no longer getting updates. Even if they still function they are still a huge security hole in your network. 
I try to avoid connected devices whenever I can but when I bought me VRR TV I couldn't. What followed was 6 month of terrible audio issues whenever the TV was in high refresh rate mode up until a very recent firmware update and my only choice was to deal with it or return it.

I would like to point out, as I have a current complaint with my United States State Attorney General in Minnesota, about the Toyota remote engine start. What Toyota has done so far, is they have proven that the key fob remote engine start can fully be decoupled from the server check. They have told me that the key fob remote engine start will work for 10 years from the date of first use, but only for me the original owner. This was a future that was sold to me with the car by the dealer, had it not been included we would not have purchased this model of car. They have illegally tied the service to a function of the key fob that is mandatory for the car to work. I am now going to start seeking out attorneys who are willing to turn this into a class-action lawsuit and stop this shit dead.

Regarding IoT, I have a few devices - smart pet feeder with video, light bulbs, power sockets and a vacuum. All of them operate via wifi and pretty much all of them have connection issues even when in close proximity to the router. And yeah, who the hell knows where they send data that should stay in my home. I for sure won't buy any more cloud devices as getting stuff on a home server is pretty awesome. Recently replaced google photos with Immich and loving it so far. Also google keyboard is replaced with FUTO keyboard. :)

Sounds like it'll be fun times when I finally buy a new car again... maybe I'll buy an old timer instead...
As for smart home... I've yet to have anybody explain to me why on earth I need any of that aside from the "cool show off" factor. I don't need to remotely unlock my door or have a camera that broadcast's its view of everybody sunbathing in my back yard to the internet.

IMHO the only kitchen device that may benefit from Wifi is perhaps a microwave with a good app that expands functions and makes it easier to do complicated things.  Wifi fridge never made sense to me.  I have some IoT stuff (energy monitors, smart switches, smart lights and solar cameras).  None of these things require internet unless I want to access them from outside the house.  LIke you, I will never install something that requires a 24/7 internet connection.  Accepting this pay-as-you-go crap companies are doing today is a massive trap that should be illegal.

These are scary times, when you see presidents asking tesla to turn off their cars in someone’s country to punish that country, all of these just makes me want to go back to the time where there was none of this cloud life! Lots of "smart" devices is BS in my opinion. I would never have anything can listen inside my home. Smartphones are more than enough. Smart locks, again NEVER. Any serious lock test video will tell you they are unsafe. CCTV and alarm where I need app access, but they are working locally too offline.
