Owner chef Mirei Ajiro, who was born in Taiwan, creates a variety of cutting-edge breads in Japan.
“33 Bakery" reopened in 2022 in Setagaya, Tokyo, which is a hotly contested area with bakery.
Its distinctive features are high-hydration dough and complex combinations of ingredients.
She also makes the sauces for her sandwiches by hand from chicken broth and wine.
I spent two days with Ms. Ajiro, who is also active as a baking instructor in China and other Asian countries. I filmed her production process and thoughts.
