I celebrated Passover this year on Enoch’s Calendar in March and to celebrate this spring season of another blessed New Year, here I am to share some of my prep. This is a lamb shoulder. I’m trimming the fat, cutting out any veins I can see with my eyes and I later soaked the meat and a few cutlets in salted water to draw out any excess blood. I added my rendered fat and salted herb blend. So good slow roasted! Passover is the first meal of the seven days of The Feast of Unleavened Bread. Our Seder comprised of lamb, bitter herbs, wine, and unleavened bread with a special dessert to top off the night. Wrapping tightly, I stored the meat in the refrigerator to marinate overnight.
