A cold, rainy week: visiting a vintage bookstore, cozy baking, and thrifting (of course!)

Welcome to a very chilly, rainy ... COZY ... spring week here at my little cottage in the woods. I went thrifting at my local Goodwill (of course), but also visited an old vintage bookstore here in the Hudson Valley. I found some wonderful books to read this summer.

In order to warm up the cottage, I had to do some cozy baking! I made a delicious gluten-free and dairy-free carrot cake (recipe below) along with a creamy Thai soup.

I also spent a lot of time relaxing with my little chihuahua, Charlie. He's just the best little friend and I couldn't be more grateful for him. Some people wonder: are chihuahuas good pets? My answer, of course, is YES!
