Our server featured here is a sixth generation Intel Skylake processor i5-6500t, these little machines are plentiful on eBay and pack enough punch for hosting. I’d recommend anything from 6th gen Intel upward, and from Ryzen Zen 2 upward for hosting. Of course you can run Minecraft servers on less powerful hardware but your performance will vary and power consumption is generally better with more recent hardware. Also I don’t mention in the video but keeping your server hardwired via ethernet is a must to maintain low latency for you and your players.
